I love kale salad so much. My favorite one in Portland can be found at our neighborhood place. It’s super lemoney and bright. I attempted to make a version at it at home last week. Step one: rinse the kale. I get dinosaur kale/Lacinato kale because it’s dark green and delicious. Separate the leaves from [...]

Sunday cooking

One of my goals for this year is to cook more. I was so inspired by this video from The Kitchn and this article from the New York Times. On Sunday, after a really lovely brunch, Ryan and I went to the store and spent the afternoon washing, chopping, roasting, and sautéing.           [...]

Today was pretty uneventful. I worked. Got some lunch. Met up with a friend. Had a gross glass of wine and watched the cold Roasted up some amazing brussels sprouts (with olive oil, shallots, balsamic, and salt). Roast at 400 for about 30 minutes. So delicious. We have red tomatoes!! Overflowing beds and plenty of squash and tomatillos! Our front yard garden box is producing tons [...]

Grad school has been over for a few weeks now and I have spent sufficient time catching up on magazines and bad tv, sleeping in, lounging around, and making millions of smoothies in my new Vita-Mix (YAY!). Being home all day has been nice because I’ve been able to fix meals for us. Here’s what I ate [...]

pesto

While I was shopping at Kruger’s for kirby cucumbers for pickles, a giant bunch of basil caught my eye. And since I am still completely enamored with my new food processor, I knew pesto had to be made. Pesto is so easy. Just take 2 parts basil (or any other herb), and blend with one [...]

catching up on pickles

I made these pickles a few weeks ago. So lovely. First up, kirby cucumbers. I just used the usual seasonings for these – red pepper, black peppercorn, fresh dill, and crushed garlic cloves. Fresh dill is the key. Seasonings on the bottom. Pickles on the top. I use wide mouthed quart sized jars for pickles. [...]
